Fermentation and Aging: Fermented and macerated for two weeks in stainless steel fermenters.

Interesting to know: Though it carries a lesser appellation, the Pinot Noir comes from slopes in the Loire Valley near Sancerre, the area formerly known as The Garden of France, a special Vin de Pays appellation created for the Loire Valley.

Pairing: Salumi, white meats, grilled salmon, grilled chicken.
